Chicken Bone Broth

I drink one cup of bone broth a day. There are so many health benefits to having bone broth… gut health, so much collagen, nutrients, etc.

The key to the most gelatinous and nutritious bone broth is chicken feet. There is sooo much collagen in chicken feet. A lot of people I know are weary of handling chicken feet… It really is not that bad! There is really no smell to them actually… I think the appearance and the fact they are feet is what freaks people out. But I promise you, adding chicken feet to your bone broth will be worth it!

This recipe is a labor of love… I’ve done this broth for 12 hours, 18 hours, 24 hours various ways and the longer you have it simmering, the most gelatinous your broth will be.

Chicken Bone Broth

Ingredients

  • 2 lbs chicken feet
  • 1 whole chicken
  • 2 lbs chicken wings
  • 2 onions, halved
  • 3 carrots, large chunks
  • 1 whole bulb of garlic, top sliced off
  • 15 cups of water
  • 3 bay leaves
  • 2 tsp oil
  • salt and pepper to taste

Instructions

  1. In large stock pot, heat oil.
  2. Add onions and garlic. Brown sides for about 2 minutes.
  3. Add chicken wings and brown skin for 4 minutes, flipping occasionally.
  4. Add rest of chicken.
  5. Add water. The water should reach just above your chicken to cover all the ingredients. The broth will evaporate.
  6. Simmer on low heat for 18 - 24 hours. Stir occasionally and scrape up any oil or imbalances that float to the top throughout the simmer.
